Tips and Tricks Tuesday! Hooray! My stove top is still broken because I still haven’t wanted to pay someone to come out and fix it, especially since we have had to recently pay for repairs on the home we own and rent out in another state (FYI- don’t purchase a home unless you plan to die in it…housing market sucks for sellers and we are stuck with this money pit of a property.)
So, here’s a quick lunch I made using left over chicken and rice which you can find the recipe for at the link above.
Ingredients:
1 head of broccoli, cut up
2 cups water
4 cups of left over chicken and rice
4 oz cream cheese
2 oz sharp cheddar cheese
1 cup milk
Preparations: Preheat oven to broil.
Cut broccoli and place in one layer in a disposable foil pan, and add the water, salt and pepper to taste. Let broccoli broil for about 10 minutes. While that’s going, in a microwaveable dish (I used Pyrex 4 cup liquid measuring cup) cut up the cheddar cheese, cream cheese, and add the milk. Microwave on high power for 4 minutes, stopping and stirring after each minute. Get out the chicken and rice to add to the broccoli pan. Strain off water from broccoli, stir in chicken and rice, and pour melted cheese on top. At this point you can add any spices you like, garlic powder and nutmeg are tasty. Then pop back in the oven for about 5 minutes. Super easy, super tasty.
